One of the projects that I am working on is my cookbook. Here is a recipe that will be in it. I cannot guarantee that I will not change something here and there when I am ready to publish, but this is pretty much the way I have been cooking this for years.
Taco Soup
1 small can Rotel chunky dice tomatoes/green chilies
1 small can light red kidney beans
1 small can dice tomatoes in sauce (unless you are fortunate
enough to have vine ripe tomatoes, then chopped up a good cup)
1 small can of corn
1 package of dried ranch dressing seasoning
2 packages of taco seasonings (your favorite, we prefer original
flavor)
½ cup onion
½ cup green peppers or red or both
small package of ground beef
Crockpot (or big pot)
I usually eat bacon in the morning so I have a skillet of bacon
grease to cook my beef in, if not, just a little of whatever oil you
prefer is fine.
Cook the beef (in bacon grease if you have it) with
ONE package of taco seasoning and the onions and peppers until brown.
While that is cooking, add all other ingredients to your crockpot or
big pot. Give a couple of stirs.
If you are not going to be there,
cook on low for about 6 hours, or cook on high for 3 in the crockpot. (I have cooked
this on high for 8 hours and it has been fine) If cooking on the stove, a
good hour is usually enough on medium heat since the meat is already
cooked. We usually serve this over corn chips and top with cheese, and if on hand, green onions.
If you do not like yours chunky like we do, add at least a cup of
water while cooking. Hope you enjoy. It's so easy, and so yummy!
Well, it turned out pretty good. Dolls are off the floor. More room for clothes in the drawers. Looks cute on the wall. Other dolls are in chairs or in the doll bed on the floor. The hangers in the picture were a little small so I bought these really nice ones on Amazon that worked much better and the American Girl clothes hung really well on them.
Love how patience my oldest can be. She has been wanting another
American Girl doll (we, plus my parents, went in together in 2011 and
got her the Girl of the Year doll, Kanani). In 2012, she got a Madame
Alexander doll, which she also loves, but she loves American Girl
dolls better. We told her if she wanted another since they are so
expensive and with everything she wanted for Christmas that she
needed to think about saving the money up herself and making sure she
really wanted it. Well, she did want another because she saved all
her tooth fairy money, cleaning her room money, birthday money and
Christmas money. The doll came in the mall last week, and she has had
a ball playing with her. She is already saving for her next! I love
this. So I reorganized her room to plan for the future dolls that are
sure to come. One thing, that we are doing for her that is also very
inexpensive and easy, is putting up painted shelves with dowels under
them. The shelf part will be beds, and the dowel will hang little
hangers for her clothes. As the dolls come, the shelf can have
sitting dolls instead of sleeping dolls.
Well, let's try this again, and again! I saved this post,
backspaced, lost everything, went back in and my whole post that was
almost done was GONE, grrrrr.
Anyhooooo, hello again. Again, yes, I used to blog years ago, but
once Facebook got very popular, I realized I posted more on it than
my blog. I also realized that more friends and family read my blog
and I have decided to go a little different route this time. I do not
mind them reading this blog, but I'm not going to associate it with my
Facebook this time around and have my posts, post on Facebook. I also
focused more on my books, and adoption than anything else but this will not be the total focus.

So, I'll just post whatever is on my mind, recipes, rants, happy
thoughts, reviews, whatever and just see if this blog is worth
anyone's time? I reedited this blog as for a while I did not see a need for it, but as all blogs, it is whatever we want, correct? People read this blog, or they don't so I will just write and post and see what happens.
